Spanish Chickpea Stew Principal Ingredients

The other day, I shared one of my favorite Spanish recipes: the Spanish chickpea stew, also known as cocido de garbanzos. It's a delightful recipe for winter time. A meal that warms you up and makes you feel better when weather isn't the most beautiful one. However, in Spain, we also use to eat it in the summertime.

Today, we're going to talk through the principal ingredients of this tasty Spanish recipe. Amongh them we find chickpeas, Serrano ham, chorizo and morcilla. So, curious to learn more about these products? Read on...



Chickpeas or Garbanzo Beans Are Healthy Vegetables

Garbanzos or chickpeas (in English), grow in Mediterranean areas as well as in India and are rich in carbohydrates as well as vegetable proteins. The main elements of chickpeas are lipids, starch, sugar, iron, vitamine B and vitamine C; which make them an excellent vegetable to consume during the winter, when human body needs rich and healthy aliments.

Although we mostly consume chickpeas in warm dishes, such as couscous and cocidos; or mashed chickpeas in preparations such as hummus, they make excellent ingredients in salads where they're used as cold vegetables.


There is also a regional French specialty which uses chickpea flour as main ingredient: flat breads.

While the use of dried garbanzo beans is recommended when preparing a cocido de garbanzos, you can use canned chickpeas; they're ready-to-use and fasten the process of the recipe.

Chorizo sausage

Chorizo sausage is a traditional Spanish specialty prepared with pork meat and seasoned with spicy paprika. By the way, the variety of paprika used in Chorizo preparation gives this very special orange colour to the sausage.

Nowadays, we can find sweet Chorizo, which is a good thing for persons who don't like the hot taste of the traditional sausage.

We can find Chorizo in many Spanish recipes: into chunks in lentil, chickpea or other bean stews or sliced in tapas and sandwiches.

Chorizo is one of the ingredients of this codico de garbanzos. If you don't use an entire one for the recipe, slice the rest and serve as appetizer

Morcilla sausage

Morcilla is another important ingredient in such a Spanish chickpea stew. Because you will just add 1 or 2 morcilla sausages in the stew you're preparing, place the rest of the pack in the freezer; you'll use them for another recipe.

Morcilla is a variety of blood pudding, a speciality of European delicatessen made out of pork blood.

The traditional and common morcilla is prepared with pork's blood, spices, onions and garlic. Morcilla de Burgos, the most popular and exported Spanish blood pudding, is prepared with rice, spices, onions and garlic.

Morcilla is a standard ingredient in the elaboration of cocidos and fabadas.

Serrano ham

Serrano ham is my favourite Spanish food! It is also one of the most popular Spanish specialties in the world. Serrano ham is made out of raw pork ham and involves a long preparation. First comes the salting of the pork's leg, then the leg rests for several months and the drying operation. These operations provide to Serrano ham its particular taste and texture.

Spaniards eat Serrano ham in many dishes as well: cut into dice or slices in tapas, in bean stews or sliced in sandwiches. The most common Serrano ham sandwich is made out of bread rubbed in olive oil, garlic and tomatoes on which we put a slice ham.

The best way of savoring Serrano ham is to cut oneself slices out of a whole ham, in the thickness that we wish.

The package featured here includes the holder and the knife - a special knife is indispensable to slice the ham and the holder will keep it in place while slicing as well as come in handy when storing the ham. Note that Serrano ham can be kept for a long time in a fresh and dry space. Don't keep in the frige!

Saffron is a natural food coloring agent and, while not indispensable in a garbanzo beans recipe, I suggest to add it to the recipe as it will provide the dish with a nice yellow colour as well as improve its Mediterranean taste.
