Today I'm going to talk you through the making of a Tunisian lait de poule or Tunisian eggnog. This is a sweet treat that Tunisians enjoy sipping in the warm after dinner evenings. A Tunisian lait de poule must be consumed freshly processed and served cold. As it is in most of this country's drinks: it is made without alcohol.

There are two versions of this tasty treat. Here's the basic lait de poule recipe made in Tunisia :

Ingredients per person:

  • 1 banana cut into trunks
  • 1/2 pint low-fat milk
  • Sugar to taste (Stevia will work if you have diabets)
  • Optional: ice cubes

Directions:

  1. In a blender, mix banana trunks, milk and sugar (and ice cubes if you want to)
  2. Serve cold.

Variation:

Add dates to the mixture and blend together. This will provide you with more savors to discover.

Quick and easy, uh? The most important point of this recipe is that you must prepare it right before consuming it otherwise the beverage doesn't have the same taste and its color turns into a brown one that's not really appetizing.

My Tunisian friends prepare this beverage after dinner, they prepare a whole jar that serves all family members. We generally eat fresh almonds with this drink, it's a great way to have sweets while also eatinig healthy treats.
