Have you ever prepared pasta with a fava beans and ham sauce? Mmmmmm... Tasty! 

I'm amazed at how much I create pasta recipes these days! To be honest, I'm not fond of pasta at all. In reality, pasta and me aren't friends. I don't like them. But in the end, being a bad cook makes me cook pasta more than I'd like to and this makes me give new recipes a try more often than I'd do with tuff I love eating.

Trying new recipes is so much fun! This allows me to discover a brand new world of savours and foods!


There was a time I used to buy fresh fava beans on a weekly basis and prepare them in many ways, including pasta with fava beans and ham sauce. However, after my move from the big town to the countryside, I have never found fresh fava beans - yes, you read right: what a shame not finding fresh fava beans in the country...

But two months ago, while doing my weekly shopping at the supermarket, I discovered the treasure of my life: frozen fava beans! Wow! I bought a pack and got back home with a bunch of additional ingredients to prepare my favorite recipe using these veggies.

My Pasta with fava beans and ham sauce recipe

Ingredients:
  • 1/2 P Frozen fava beans
  • 1/2 P Diced ham
  • 8 oz Low fat sour cream (or creme fraiche)
  • 3/4 cup Grated Emmenthal cheese
  • Salt, pepper and nutmeg to taste
  • 1 P pasta

Directions
  1. Pour fava beans in boiling water and boil for 15 minutes
  2. Drain fava beans(charms)
  3. In a casserole, on a low heat, pour beans, diced ham and sour cream
  4. Season to taste using salt, pepper and nutmeg
  5. Cook for 5 minutes
  6. Slowly add the grated cheese to the mixture
  7. Once cheese melted, the sauce is ready.
In the meantime:
Pour pasta in boiling water
Cook until al dente
Keep warm.

Voila, your evening meal is ready to eat! You don't need to add cheese but if you wish you can sprinkle some grated Parmesan just to add some more flavour to the sauce.

You can adapt this pasta with fava beans and ham sauce recipe to your own tastes. For example, if you want to add more vegetables and less ham, just reduce the quantities. If you don't want to add as much grated cheese, then reduce its weight too.

However, I don't recommend using cheese like Cheddar as it doesn't fit with sour cream at all. Therefore, white and preferably low-fat cheese such as Emmenthal will work better.

The type of pasta doesn't really matter but it is easier to mix pasta, ham and beans when using macaroni or penne or similar pasta.

A salad can be an excellent side dish in this case.
