My Homemade Spanish Tortilla de Patatas

Today I'm going to show you how to prepare a Spanish Tortilla de Patatas.

When it comes to tortilla, most Americans think about South American tortillas that are made out of corn dough and filled with different ingredients that suit each individual's personal taste.

This is not the type of tortilla I'm going to show you how to make today, the one that you're going to discover is the real tortilla, the Spanish one, made using sliced potatoes, onions and eggs. Mine will also include diced ham because I like some meat in my tortillas.



Actually, you can add whatever type of vegetable or meat you like the most in a Spanish tortilla. One can see zucchini tortillas, spinach tortillas, chicken tortillas, and many other variations. They generally include ingredients that people love eating and differ from a standard omelet in that they're cooked on both faces and are quite thick. 

Spanish tortillas are different from frittatas since their cooking isn't finished in the oven.

Here's my homemade Spanish tortilla de patatas recipe

Ingredients:

  • 2 eggs (per serving)
  • 1 or 2 sliced small/medium potatoes per serving
  • 1 diced onion
  • Optional: diced ham
  • Salt, pepper and powdered garlic to taste
  • Vegetable oil
  • 2 tablespoons olive oil

Directions:

  1. In a large non-stick skillet, fry sliced potatoes in vegetable oil over a high heat
  2. When potatoes are tender, add diced onions and fry until transparent
  3. Drain vegetable oil from the skillet and set fried potatoes and onions aside
  4. In a large bowl, beat all eggs
  5. Add salt, pepper and powdered garlic to taste
  6. Pour fried potatoes and onions and assemble
  7. Optional: add diced ham to the mixture
  8. In a large skillet, heat two tablespoons olive oil
  9. Pour the mixture and cook each face for a few minutes.
Serve with pickles and other vegetables as well as bread.

Note to myself: get a new non-stick skillet (mine is 20 years old)!

As said above, I made a note to myself to get a non-stick skillet as mine is quite old and my tortilla stuck at some places. I really don't like that as it makes the tortilla look bad and it makes also the dishwash harder.

In addition, I'm cooking an omelet on both faces. Therefore I need a skillet that allows me to not hurt my omelet when switching from one side to another. Here's a wonderful tool that will allow me to do so and make this process a piece of cake!

When the tortilla is ready, you can put it directly in your plate, however, when making a Spanish tortilla for many people, it is better to nicely present the meal. Therefore, a special plate is indispensable.
